I used to get when I clicked on Microsoft edge logo in start, a browser with the very top line on it saying "Microsoft Edge", and the topics of the day through the whole window. Now when I click the logo, I get "search" at the top line, and a blank field where the topics should be. Why is that?

Please click the Gear icon on the top right, and select Full Page News feed to show the news.

The behavior changed because the Edge start/new tab page content is controlled by feed settings (My Feed / Work feed) and those feeds can be turned off or changed. When the feed is disabled or not selected, Edge shows a more minimal page with just search instead of the news/topics of the day.
To get the topics back, restore the feed on the new tab page:
If using Edge in a work/organization environment, the organization’s admin can also control whether the feeds appear. Admins can:
If the feed was disabled entirely, an admin can re-enable it there so the topics of the day reappear.
